Going Coastal: Creole Lasagna


Everyone loves lasagna, right?  Well several years ago I catered a lasagna party and in trying to show the versatility of the dish I came up with this Creole version that includes seafood and smoked sausage.

Creole Lasagna
Lasagna noodles (do yourself a favor and use the “no boil” kind)
1/2 cup shrimp, sautéed
1/2 cup crab claw meat, sautéed
1/2 lb smoked sausage, diced and browned
1 med onion, diced
5 oz can black olives
1 can diced tomatoes
8 oz Mozzarella cheese, grated
8 oz tomato sauce
8 oz Alfredo sauce
2 tablespoon crab and shrimp boil or 3 tablespoon crawfish stock

Combine crab and shrimp boil, tomato, and Alfredo sauces in a pan and heat through. First layer- pasta, shrimp, crab, tomatoes, onion, sauce, and cheese. Second layer- pasta, sausage, olives, sauce and cheese. Top layer- pasta, sauce, any remaining seafood or sausage and remaining cheese. Bake covered with foil for about 30-35 minutes at 375 degrees. Remove foil and bake 15 minutes more. Let cool 15 minutes before serving.
